Roast duck pie with sage forcemeat balls & parsley pastry
For the filling:
Place 2 duck legs in a hob-to-oven pan with a drop of plain oil
Season with salt and fry over a medium heat until the legs are golden on both sides
Transfer to oven and cook through (around 30 minutes at 180C Fan)
Remove the duck legs from the oven
Drain off all but 1 tablespoon of the fat from the pan
Place back on the hob over a medium heat
Cut 4 slices of unsmoked streaky bacon into strips and add to the pan
Chop 4 medium mushrooms in to sixths and add to the pan
Fry the mushrooms until golden and bacon til crispy
Add to the pan:
200 ml of red wine
100ml of chicken stock
A bay leaf or 2
