It’s St Patrick’s Day, so we've cooked up a feast of our own recipe Irish stew inspired meatballs with colcannon & champ!!
We make no apologies for not always specifying exact weights and measures - just follow your instincts like we do - it really is THE best way to create new recipes and dishes!
For the meatballs:
Mix together 500g of minced organic lamb, 4 finely sliced spring onions, a bunch of parsley (chopped), and season generously with sea salt and black pepper.
Take a portion of the mixture and using your hands, roll into a ball the size of a large walnut.
For perfectly round meatballs though we use our fave new gadget: the scissor action 'meatballer'!
A must for all true meatball lovers and less hands-on cooks!
Once you've prepared all the balls, roll them in seasoned flour, shaking off any excess.
