How to make home-made Quorn, sage, thyme & chive meatballs!

If you love Quorn and adore 'meatballs' then this is the recipe for you!
As always, use whatever ingredients and quantities you have on hand, but here's how we made ours:
6 Quorn sausages (defrost first if frozen)
1 large handful of grated mature Cheddar
½ teaspoon dried sage
¼ teaspoon dried thyme
½ teaspoon sweet paprika
1 teaspoon mustard powder
1 large handful of breadcrumbs
1 tablespoon finely chopped chives
1 egg, beaten
Freshly ground black pepper
2 tablespoons mild olive or sunflower oil
Throw 6 Quorn sausages into your food processor
Although we use our trusty food processor for jobs like this, if you don't have one, using a large chopping board and knife to 'mince' up the defrosted Quorn sausages to the texture shown above will do the trick!
Tip: Colour coded and indexed boards help prevent any cross-contamination between food types and are a great option if you want to buy your first set of chopping boards!
Tip the minced up sausages into a mixing bowl and add the rest of the ingredients, except the oil
Take a portion of the mixture and using your hands, roll into a ball the size of a large walnut.
Remove from the fridge and fry the balls over a medium heat, turning regularly until golden and piping hot in the centre
Blue cheese dip
Mix together any blue cheese, chopped chives, soured cream and season with sea salt & freshly ground black pepper. These delicious 'meatballs' go equally well served with home-made tomato relish - enjoy!
